Maple Roasted Sweet Potatoes (Via Eating Well Magazine)

I was intent on making the sweet potato casserole I posted the link to earlier and may someday make that but instead opted to make the Maple Roasted Sweet Potato recipe for my family's Thanksgiving meal.  We had our first dinner this past Sunday and it went rather well, with the exception of the citrus rub on the turkey but that is another post.   I did make the recipe as follows but since it was a special meal I didn't want to put sweet potato chunks on the table instead I put the roasted potato through my food processor and added pineapple, the end result was fantastic!!!

I am posting the recipe link here but don't forget to puree the roasted sweet potato with about a quarter cup of pineapple, not so much to overpower the fantastic flavor but just enough to whisper pineapple on tongue.

Polpette (homemade meatballs)

This is a recipe that I have used many many times, it is posted in it's original form from a cookbook that comes from the Italian Woman's Club.  It is very simple and quick to put together, which I love.  I have made notes to variation I use but the calories are for the recipe as it stands in the book.

Sweet Potato Meringue topped casserole

I haven't tried this as sweet potato casserole has never been a family tradition.  I had never tried the standard recipe until a few years ago and had to spit it out as it was just too sickeningly sweet, way to ruin a good nutritional food source folks.  Recently I was reading my Eating Well Magazine which had this really interesting version of the casserole and I think this year I might give this a try.  Have any of you made this and if you have let me know what you think.

Meringue-Topped Sweet Potato Casserole

From EatingWell:  November/December 2010 This lightened-up take on the classic Thanksgiving sweet potato casserole is spiked with crushed pineapple and toasted pecans. We top it with an airy, slightly sweet meringue. You can pipe the meringue to make it look fancy or simply spread it neatly with a rubber spatula.

Beef Roast with Root Vegetables

It only looks scary and alien, tastes great however.
My house smells fantastic, I am cooking a dish I first saw a few years ago on the Food Network show with Robin Miller called Beef it Up .  I love root veggies; the more the merrier as far as I am concerned.  You first start with the Beef Roast with Root Vegetables, I use a mid sized roast (2lbs) and increase the amount of root vegetables adding carrots and turnips as well.  After the main meal tonight I will puree the remaining root vegetables into a fantastic hearty soup.  The remaining beef will be shredded and added to the salad that Robin Miller detailed on the same show called Asian Beef Salad with Cilantro, Scallions and Sesame Seeds.  We have had the Green Chili Beef Empanadas served with Mixed Greens & Raspberry-Walnut dressing is another very tasty reuse of the beef, the crust isn't needed, I line a baking sheet with wax paper to bake the beef with green chili's and cheese stacked on top, the wax paper makes clean up easier, you can work this out whichever way is best for you.

Whole Wheat Pumpkin Pancakes

These pancakes were the best and I certainly will be adding them to my breakfast rotation. This is a pumpkin recipe but don't be that fussy if you can't find pumpkin you certainly can substitute winter squash. I don't keep pumpkin pie spice on hand as making my own is quick.

Maui Black Bean Soup (via Clean Eating)

Maui Black Bean Soup

Everything in this soup happens to be things my family loves.  I knew as soon as I saw the recipe that it would be a hit and it certainly was.  You can puree this soup once it is cooked but we never do and eat it as is.

Chocolate Date Nut no bake cookies/bar

This is a bar/cookie that tastes like the Lara Jocalat bars.. Try these and your family will love them. What better way to get your kids to eat fruit and fiber.. I love the premade bars and thought I could reproduce them in my own kitchen. I gave one to my son without telling him what I had been trying to do and asked what he thought of them. He immediately said they tasted just like Jocalat, success..  After posting this recipe I thought about adding Shakeology® instead of cocoa and tried it in the next batch, that is a very good addition and I would recommend it as it add a lot of nutrition to the mix.  This is a very flexible recipe, you can add a variety of ingredients to personalize this cookie to your taste but do need the dates or plums as a base.

Chicken and Vegetable Soup

Chicken Vegetable Soup

By JJ Hughes

I love a good soup and this is something we have been eating all our life. As kids we called it garbage soup as it always had whatever cooked meat and/or veggie left over in the fridge in it. It is quick to put together but has taste that goes a long way. Now I like to add steel cut oats to help thicken the broth naturally then just before serving I place chopped spinach in the bottom of the bowl. The hot soup is enough to steam the spinach but leaving the leaves beefy enough to really punch it up.

A perfect wintry dessert! The fruits and tea in this dish all contain good amounts of polyphenols, powerful antioxidants that improve blood flow and have been shown to reduce the risk of heart disease. Feel free to vary the types and amounts of dried fruit in this recipe. Use what you have on hand.

Tahini Chicken and Rice

Tahini Chicken and Rice

I can't think of a time when I haven't had rave reviews of this dish.  It started with a Clean Eating recipe and evolved into this dish of circumstance.  I happened to have a bag of broccoli slaw in the fridge to add to the newly diced.  The recipe calls for either tamari or soy, I always use both and love the result.

Winter Broccoli Soup - Oxygen #52

I have always had a thing for broccolli soup and remember the first time I made this soup fondly. It is quick, easy and ready in what seems like seconds. I don't know if you keep parsnips in the house but I do as I like the hint of horseradish this vegetable offers a dish. I have become enamored with making my own soups and this is a fun one to try.
